Description

Bring your favorite animations to life with this vibrant and moist lemon-infused Anime Cake. This recipe pairs a tender, citrusy sponge with a silky-smooth Swiss meringue buttercream for a dessert that looks like a 2D masterpiece and tastes like a dream.


Ingredients

  • 1 cup (240g) unsalted butter, softened
  • 2 cups (400g) white sugar
  • 4 large eggs
  • 2.5 cups (370g) plain flour
  • 0.75 cup milk
  • 0.25 cup lemon juice
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon extract
  • 5 egg whites (for buttercream)
  • 2 cups sugar (for buttercream)
  • 1.5 cups butter, softened (for buttercream)
  • 1 pinch salt (for buttercream)
  • 1 pinch cream of tartar (for buttercream)
  • Black food coloring


Instructions

  1. Preheat your oven to 350°F (175°C) and grease and line two 8-inch cake pans with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar for 3 to 5 minutes until the mixture is light and fluffy.
  3. Add the eggs one at a time, beating well after each addition, then mix in the lemon zest and extract.
  4. Whisk together the flour, baking powder, and salt, then slowly add to the butter mixture, alternating with the milk and lemon juice.
  5. Divide the batter evenly between the prepared pans and bake for 30 to 35 minutes or until a toothpick comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  7. To make the buttercream, whisk egg whites and sugar in a heat-proof bowl over simmering water until the sugar is dissolved.
  8. Remove from heat and whip to stiff peaks, then slowly add softened butter piece by piece until the frosting is thick and glossy.
  9. Assemble the cake and use black-dyed frosting to outline the edges and drips for a 2D anime effect.

Notes

To achieve the signature 2D anime look, ensure your cake is completely chilled before applying the black outlines to prevent the colors from bleeding. If your Swiss meringue buttercream appears to curdle while adding the butter, simply continue whipping at high speed until it emulsifies into a smooth consistency.
