Description

A sophisticated lemon loaf that hides a playful secret: a dense, midnight-black vanilla sponge shaped like the iconic Batman symbol. This striking dessert combines the bright aroma of fresh citrus with a rich, velvety crumb for a truly memorable reveal in every slice.


Ingredients

  • All-purpose flour
  • Unsalted butter, softened
  • Granulated sugar
  • Baking powder
  • Salt
  • Vegetable oil
  • Heavy whipping cream
  • Black gel food coloring
  • Vanilla extract
  • Large eggs, room temperature
  • Fresh lemon zest
  • Fresh lemon juice


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 13×9 inch pan for the black sponge.
  2. Cream softened butter, then mix in dry ingredients (flour, sugar, baking powder, salt) until sandy.
  3. Add heavy cream, oil, vanilla, and eggs; beat for one minute, then fold in black gel coloring.
  4. Spread into the prepared pan and bake for 25-30 minutes; cool completely, then chill in the refrigerator.
  5. Use a Batman cookie cutter to punch out shapes and place them in the freezer for 30 minutes.
  6. Preheat oven to 350°F (175°C) again and grease a 9×5 inch loaf pan.
  7. Prepare the lemon batter by mixing flour, sugar, baking powder, salt, creamed butter, heavy cream, oil, lemon juice, lemon zest, and eggs until glossy.
  8. Pour one-third of the lemon batter into the loaf pan and stack the frozen Batman shapes tightly in a row down the center.
  9. Carefully spoon the remaining lemon batter over and around the shapes, smoothing the top.
  10. Bake for 25-30 minutes until the lemon sponge is set and a skewer comes out clean.
  11. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Ensure all your cold ingredients, especially the eggs and heavy cream, are at room temperature before starting the batter to achieve the smoothest emulsion. When stacking the frozen cutouts, press them firmly against each other to prevent the lemon batter from seeping between the shapes, which keeps the hidden design sharp and continuous.
