Ingredients

  • All-purpose flour
  • Baking powder
  • Salt
  • Unsalted butter
  • Vegetable oil
  • Granulated sugar
  • Large eggs
  • Milk
  • Vanilla extract
  • Powdered sugar
  • Heavy cream
  • Purple sprinkles


Instructions

  1. Preheat your oven to 350°F (176°C) and prepare three 8-inch cake pans with parchment circles and grease the sides.
  2. In a medium bowl, whisk together the flour, baking powder, and salt, then set aside.
  3. Using a large mixer bowl, beat the butter, oil, sugar, and vanilla together for 2 to 3 minutes until the mixture is light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition and scraping the sides of the bowl to ensure a consistent texture.
  5. Mix in half of the dry ingredients until just combined, slowly pour in the milk while mixing, and finish with the remaining dry ingredients.
  6. Divide the batter evenly among the prepared pans and bake for 22 to 25 minutes or until a toothpick comes out with a few moist crumbs.
  7. Allow the cakes to cool completely before frosting with a whipped mixture of butter, powdered sugar, vanilla, and heavy cream.

Notes

For the smoothest frosting application, apply a thin crumb coat to the cake layers and refrigerate for 30 minutes before the final decorating session. Using high-quality vanilla bean paste instead of extract can add beautiful speckles and an even deeper flavor to the layers.
