Description

Transform a simple box of cake mix into professional, truffle-like cake pops with a snappy chocolate shell. This express recipe yields a dense, moist center that is perfect for parties and customizable for any holiday or theme.


Ingredients

  • 1 box (15.25 oz) yellow cake mix
  • Water, vegetable oil, and eggs (as directed by cake mix box)
  • 1 container (16 oz) prepared chocolate frosting
  • 1 package candy melts
  • Lollipop sticks
  • Decorating icing and sprinkles (optional)


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Combine cake mix, water, oil, and eggs in a large bowl; beat on low for 30 seconds and then medium for 2 minutes.
  3. Pour batter into the dish and bake for 28–33 minutes until a toothpick comes out clean.
  4. Let the cake cool completely for approximately 1 hour.
  5. Crumble the cooled cake into a large bowl and stir in the chocolate frosting until the mixture is sticky and dough-like.
  6. Refrigerate the mixture for at least 30 minutes to firm up.
  7. Roll the dough into 1.5-inch balls and place them on a baking sheet.
  8. Melt candy melts in the microwave in 20-second intervals.
  9. Dip the tip of a lollipop stick into the coating, push it halfway into a cake ball, and let it set briefly.
  10. Dip the entire ball into the melted coating, tap off excess, add sprinkles, and place upright in a styrofoam block to dry.

Notes

For the smoothest finish, ensure your cake is completely cooled before crumbling, as any residual warmth can make the frosting melt and cause the pops to lose their shape. If your candy coating seems too thick to dip easily, stirring in a teaspoon of shortening will help it flow better and create a thinner, more even shell.
