Description

A luscious, oil-based chocolate cake that achieves a perfect velvet crumb using strong coffee and an easy all-in-one mixing method. Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups caster sugar
  • 2 teaspoons baking powder
  • 1 teaspoon bicarbonate of soda
  • 3/4 cup dark cocoa powder
  • 2 large eggs
  • 1 cup strong hot black coffee
  • 1/2 cup olive oil
  • 1 cup milk
  • 8 ounces cream cheese, room temperature
  • 1/2 cup condensed milk
  • 1 1/2 cups heavy cream, divided
  • 1 teaspoon vanilla extract
  • 6 ounces dark chocolate, finely chopped
  • 1 cup chocolate cereal
  • 1 tablespoon melted chocolate or cocoa powder (for cereal coating)


Instructions

  1. Preheat your oven to 175°C (350°F) and thoroughly grease a cake pan.
  2. In a large mixing bowl, whisk together the flour, caster sugar, baking powder, bicarbonate of soda, and cocoa powder.
  3. Add the eggs, hot coffee, olive oil, and milk to the bowl and stir vigorously until the batter is smooth and liquid in consistency.
  4. Pour the batter into the pan and bake for 30–35 minutes until a toothpick inserted into the center comes out with only a few moist crumbs.
  5. Transfer to a wire rack and allow the cake to cool completely before frosting.
  6. Beat the room-temperature cream cheese until silky, then gradually incorporate the condensed milk, 1 cup of heavy cream, and vanilla, whipping until stiff, spreadable peaks form.
  7. Prepare the ganache by heating the remaining 1/2 cup of heavy cream until just simmering, pouring it over the chopped dark chocolate, letting it sit for 60 seconds, and then stirring until glossy.
  8. Toss the chocolate cereal with a small amount of melted chocolate and cocoa powder to create a crunchy topper.
  9. Assemble by spreading a thick layer of frosting over the cake, pouring the ganache over the top, and finishing with the chocolate-coated cereal.

Notes

For the most intense chocolate flavor, ensure the coffee is steaming hot when added to the batter as this helps to bloom the cocoa powder instantly. If you find your frosting is too soft, chill it for 15 minutes before spreading to help it maintain its cloud-like structure. To ensure a smooth ganache, avoid over-stirring the chocolate and cream mixture before the one-minute rest period is complete.
