Ingredients
- 375g (approx. 3 cups) All-purpose flour
- 1 tablespoon Baking powder
- 1 teaspoon Salt
- 1/2 cup (113g) Unsalted butter, softened to 65-68°F
- 1/2 cup Neutral oil (avocado or canola)
- 1 3/4 cups Granulated sugar
- 4 Large eggs, room temperature
- 2 teaspoons Vanilla extract
- 1 cup Buttermilk, room temperature
Instructions
- Preheat oven to 350°F (177°C) and prepare two deep 8-inch round cake pans by lining the bottoms with parchment paper and lightly greasing the sides.
- In a stand mixer fitted with the paddle attachment, combine the softened butter, oil, and granulated sugar and beat on medium-high speed for 3-5 minutes until pale and voluminous.
- Reduce the mixer speed to medium-low and add the eggs one at a time, beating well after each addition; stir in the vanilla extract until incorporated.
- In a separate medium bowl, whisk together the flour, baking powder, and salt.
- With the mixer on the lowest setting, add the dry ingredients in three parts and the buttermilk in two parts, alternating between them (Dry-Wet-Dry-Wet-Dry), mixing only until the last streak of flour disappears.
- Divide the batter evenly between the prepared pans and bake for 30-35 minutes until the surface springs back and a toothpick comes out with a few moist crumbs.
- Cool the cakes in their pans for 10-15 minutes before inverting them onto a wire rack to cool completely.
