Description

This vibrant Dino Cake features a moist, oil-based chocolate crumb paired with a silky turquoise vanilla icing and rich ganache. Designed as an express birthday solution, it offers a professional melt-in-your-mouth texture using simple pantry staples and whimsical decorations.

Ingredients

  • All-purpose flour
  • Cocoa powder
  • Baking soda
  • Baking powder
  • Eggs
  • Sugar
  • Canola oil
  • Vanilla extract
  • Buttermilk
  • Dark chocolate (50-70%)
  • 35% heavy cream
  • Corn syrup
  • Egg whites
  • Softened butter
  • Turquoise gel food coloring
  • Dinosaur figurines, pompoms, muffin liners, and sprinkles

Instructions

  1. Preheat the oven and grease the cake pans, then sift the flour, cocoa powder, baking soda, and baking powder into a large bowl to aerate the dry ingredients.
  2. In a separate bowl, whisk the eggs and sugar until pale and thickened before gradually streaming in the canola oil, vanilla, and buttermilk.
  3. Fold the dry ingredients into the wet mixture until just combined, pour into the prepared pans, and bake until a skewer comes out with moist crumbs.
  4. Allow the cake layers to cool in the pans for ten minutes before transferring them to a wire rack to firm up completely.
  5. Whisk the egg whites and sugar over a double boiler until dissolved, whip to stiff peaks, then gradually incorporate the softened butter and turquoise gel coloring until smooth.
  6. Prepare the ganache by melting together the chopped dark chocolate, heavy cream, and syrup until glassy.
  7. Assemble the cake by layering with chocolate ganache, frosting the exterior with turquoise vanilla icing, and decorating with toy dinosaurs and pompoms.

Notes

For the smoothest icing possible, ensure your butter is slightly softened but still cool to the touch before whipping it into the egg whites. If you find the turquoise color is too light, add the gel food coloring one drop at a time, as gel is highly concentrated and a little goes a long way toward achieving that prehistoric hue.
