Description

This enchanting doll cake features a velvety hot milk sponge scented with strawberry and a light-as-air whipping cream finish. It is the perfect blend of whimsical design and sophisticated Mediterranean baking techniques, ensuring a moist crumb that delights every guest.

  • Caster sugar

  • Hot milk
  • All-purpose flour

  • Whipping cream (Tropolite or high-stability cream)
  • Icing sugar
  • Fashion doll (for assembly)


Instructions

  1. Preheat your oven to 170°C (340°F) and prepare three round cake pans with diameters of 20 cm, 18 cm, and 15 cm by lining with parchment and greasing the sides.
  2. In a large mixing bowl, beat the softened butter and caster sugar until the mixture is pale, light, and aerated.
  3. Add the eggs one at a time, beating well after each addition, then stir in the strawberry essence, red food color, and hot milk.
  4. Sift together the flour, baking soda, and baking powder, then gently fold into the wet mixture using a spatula until just combined.
  5. Distribute the batter into the prepared pans and bake for 20–25 minutes or until a skewer comes out clean.
  6. While the cakes cool on a wire rack, whip the cold cream with icing sugar, strawberry essence, and red food color until stiff peaks form.
  7. Level the cooled cakes, stack them from largest to smallest with cream layers in between, insert the doll into the center, and pipe the dress decoration using a star nozzle.

Notes

To ensure your doll cake remains stable, always apply a thin crumb coat of icing and refrigerate for 20 minutes before performing the final decorative piping. If you are baking in a humid climate, chill your mixing bowl and beaters before whipping the cream to help achieve the stiffest possible peaks for the dress design.
