Ingredients

  • 1 cup fresh strawberries, pureed
  • 1/2 cup vegetable oil
  • 1/2 cup unsalted butter, melted
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1/2 cup milk
  • 2 1/2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 oz cream cheese, room temperature
  • 1/2 cup strawberry jam
  • 1/2 cup powdered sugar
  • 1/4 cup heavy cream
  • Fresh sliced strawberries for topping


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Blitz strawberries in a food processor to create a smooth puree.
  3. In a large bowl, whisk together oil, melted butter, sugar, eggs, and vanilla.
  4. Incorporate the strawberry puree and milk into the wet mixture.
  5. Sift and gently fold in the flour, cornstarch, baking powder, baking soda, and salt.
  6. Pour batter into the pan and bake for 25–30 minutes until a toothpick comes out with moist crumbs.
  7. Cool completely before topping with a whipped mixture of cream cheese, jam, sugar, and heavy cream.

Notes

To ensure a perfectly smooth frosting, sift the powdered sugar before mixing it with the cream cheese. If the cake is for a special occasion, you can enhance the natural pink color with a tiny drop of food coloring, as the strawberry puree tends to fade slightly during the baking process.
