Description

This enchanting Girl Cake features a moist strawberry-infused sponge sculpted into a graceful bell shape and adorned with a gradient of pink buttercream rosettes. It is a stunning centerpiece that blends playful doll aesthetics with sophisticated Mediterranean textures for a truly memorable celebration.


Ingredients

  • 3 layers of strawberry cake base
  • 1/2 cup dehydrated strawberries, finely crushed
  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 4-6 cups powdered sugar, sifted
  • 2-4 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • Pink food coloring
  • 1 doll for the center
  • Sugar pearls for decoration


Instructions

  1. Bring butter and cream cheese to room temperature until soft.
  2. Grease a 9-inch bundt pan and two 6-inch rounds with melted butter using a pastry brush.
  3. Bake at 350ºF (175ºC) until a toothpick comes out clean, about 25 minutes for rounds and 35 minutes for the bundt.
  4. Rest cakes in pans for 15 minutes before inverting onto wire racks to cool completely.
  5. Level the bundt cake bottom and use a biscuit cutter to remove the centers of the 6-inch rounds.
  6. Stack the cakes and apply a thin strawberry cream cheese crumb coat, then chill for one hour.
  7. Carve the chilled cake with a serrated knife to create a smooth, bell-shaped slope.
  8. Pipe ombre rosettes using a 1M tip, starting with dark pink at the base and transitioning to light pink and white at the top.
  9. Insert a cleaned doll wrapped in plastic into the center and finish the waistline with small frosting stars and sugar pearls.

Notes

To ensure the doll sits securely, choose a cake board that is at least two inches wider than the base of the bundt cake. If you are baking in a humid environment, add an extra half-cup of powdered sugar to the buttercream to maintain the structural integrity of the rosettes.
