Ingredients

Instructions
- Preheat oven to 350°F (180°C) and grease an 8-inch round cake tin.
- Beat eggs and caster sugar together in a large bowl until the mixture is pale, thick, and very fluffy.
- Sift the maida, cocoa powder, and baking powder together to ensure a smooth crumb.
- Gently fold the dry ingredients and essence into the egg mixture using a spatula, being careful to maintain the volume.
- Pour the batter into the tin and bake for 15–20 minutes until a skewer comes out clean, then allow to cool completely.
- Slice the cake horizontally into two layers and brush each generously with milk for moisture.
- Whip the cream with orange food color, spread it between layers with chocolate chips, and frost the exterior before decorating with fondant jungle shapes.
Notes
When sifting your dry ingredients, hold the sieve high above the bowl to incorporate more air into the flour and cocoa. This extra aeration combined with room-temperature eggs helps the sponge absorb the milk soak more effectively without becoming soggy.
