Description
This elegant Lambeth Cake combines vintage Victorian aesthetics with a modern, efficient baking method for a stunning dessert that is surprisingly quick to assemble. With its moist vanilla crumb and layers of colorful, ruffled buttercream, it turns any ordinary day into a festive celebration.
Ingredients
- Vanilla cake batter (enough for four 6-inch layers)
- 6x batch of American buttercream
- Red, pink, orange, yellow, and green gel food coloring
- Confetti sprinkles
- Sugar pearls
Instructions
- Preheat your oven to 350 F (175 C) and prepare four 6-inch cake pans with non-stick spray.
- Divide the vanilla batter into four bowls, tinting three with pink, orange, and yellow gel coloring, then fold confetti sprinkles into the fourth.
- Bake for 30-35 minutes until the centers are set, then cool completely on a rack and level the cake tops.
- Stack the layers with buttercream, apply a thin crumb coat to the exterior, and chill for 30 minutes.
- Apply a final smooth coat of buttercream, chill for 1 hour, then use a round cookie cutter to mark 8 half-circle templates around the top edge.
- Pipe orange ruffles using tip 104 along the bottom and the template marks, then layer pink ruffles directly over the orange.
- Add pink shell borders using tip 4B and yellow accents with tip 17.
- Finish the design with small pink flowers using tip 129, green leaves using tip 352, and place a sugar pearl in each flower center.
Notes
For the cleanest ruffles, keep your piping tips clean by wiping them frequently with a damp cloth. If the buttercream starts to get too warm from the heat of your hands, place the piping bag in the refrigerator for a few minutes to restore its firm consistency for better definition.
