Description

This vibrant Lego Cake features a remarkably tender sponge made with orange soda for a light, airy lift. These edible building blocks are easy to assemble and decorate, making them a playful and delicious centerpiece for any birthday celebration.


Ingredients

  • 4 Eggs
  • 1 ½ cups White Sugar (300g)
  • 2 teaspoons Vanilla Sugar
  • 7 fluid ounces Sunflower Seed Oil (210ml)
  • 6 ½ fluid ounces Orange Soda (190ml)
  • 2 ¾ cups All-Purpose Flour (345g)
  • 1 tablespoon Baking Powder
  • 1 pinch Salt
  • Candy-coated milk chocolate pieces (M&Ms)
  • 500g Confectioners’ sugar
  • Lemon juice (for icing consistency)
  • Assorted food coloring


Instructions

  1. Preheat your oven to 350°F (175°C) and line a rimmed baking sheet with parchment paper.
  2. In a large bowl, beat the eggs, white sugar, and vanilla sugar with an electric mixer until pale, thick, and foamy.
  3. Slowly stir in the sunflower seed oil and orange soda, being careful not to deflate the mixture.
  4. Sift the flour and baking powder together, then gently fold into the wet ingredients until just combined.
  5. Spread the batter onto the baking sheet and bake for 30 minutes, or until a toothpick comes out clean.
  6. Let the cake cool completely for at least one hour before cutting into 1.5 x 3-inch rectangles.
  7. Whisk confectioners’ sugar with lemon juice and food coloring to create a thick icing; brush onto cake pieces and top with matching M&Ms.

Notes

To ensure your Lego bricks look as sharp as possible, let the icing set completely before stacking the pieces. If the icing is too runny, add a bit more confectioners’ sugar; if it’s too thick, a few extra drops of lemon juice will help achieve the perfect spreading consistency. Using room temperature eggs will help the batter emulsify better for a more uniform crumb.
