Description
This indulgent Ooey Gooey Butter Cake features a dense, chewy cookie-like base topped with a velvety, molten cream cheese layer. It is a decadent dessert that balances rich buttery notes with a delicate powdered sugar crust for the ultimate melt-in-your-mouth experience.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 cup granulated sugar
- 1 1/2 cups salted butter, melted and divided
- 3 large eggs, divided
- 1/4 cup milk
- 1 tablespoon vanilla extract, divided
- 8 ounces cream cheese, softened
- 5 cups powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and lightly coat a 9×13-inch baking dish with cooking spray.
- In a large glass bowl, whisk together the all-purpose flour and baking powder to aerate the mixture.
- In a separate bowl, mix the granulated sugar with one egg, 1/2 cup of the melted butter, the milk, and half of the vanilla extract.
- Slowly fold the flour mixture into the wet ingredients to form a thick, tacky dough, then press it evenly into the bottom of the prepared dish using a spatula or damp fingers.
- In another bowl, beat the softened cream cheese until smooth, then add the remaining two eggs, the rest of the melted butter, and the remaining vanilla extract.
- Gradually add the five cups of powdered sugar on low speed, beating until the mixture is glossy, thick, and smooth.
- Spread the cream cheese mixture over the cake base and bake for 40 to 45 minutes until the edges are golden brown and the center still has a slight jiggle.
Notes
To ensure the perfect gooey texture, allow the cake to cool completely in the pan before slicing; this gives the custard-like top layer time to set properly. If you prefer a more caramelized edge, use a metal baking pan instead of glass, and always ensure your cream cheese is at room temperature to prevent lumps in the topping.
