Description

This indulgent Ooey Gooey Butter Cake features a dense, chewy cookie-like base topped with a velvety, molten cream cheese layer. It is a decadent dessert that balances rich buttery notes with a delicate powdered sugar crust for the ultimate melt-in-your-mouth experience.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup granulated sugar
  • 1 1/2 cups salted butter, melted and divided
  • 3 large eggs, divided
  • 1/4 cup milk
  • 1 tablespoon vanilla extract, divided
  • 8 ounces cream cheese, softened
  • 5 cups powdered sugar


Instructions

  1. Preheat your oven to 350°F (175°C) and lightly coat a 9×13-inch baking dish with cooking spray.
  2. In a large glass bowl, whisk together the all-purpose flour and baking powder to aerate the mixture.
  3. In a separate bowl, mix the granulated sugar with one egg, 1/2 cup of the melted butter, the milk, and half of the vanilla extract.
  4. Slowly fold the flour mixture into the wet ingredients to form a thick, tacky dough, then press it evenly into the bottom of the prepared dish using a spatula or damp fingers.
  5. In another bowl, beat the softened cream cheese until smooth, then add the remaining two eggs, the rest of the melted butter, and the remaining vanilla extract.
  6. Gradually add the five cups of powdered sugar on low speed, beating until the mixture is glossy, thick, and smooth.
  7. Spread the cream cheese mixture over the cake base and bake for 40 to 45 minutes until the edges are golden brown and the center still has a slight jiggle.

Notes

To ensure the perfect gooey texture, allow the cake to cool completely in the pan before slicing; this gives the custard-like top layer time to set properly. If you prefer a more caramelized edge, use a metal baking pan instead of glass, and always ensure your cream cheese is at room temperature to prevent lumps in the topping.
