Description

This classic Mediterranean-style butter cake offers a tender, melt-in-your-mouth crumb and a delicate golden crust. Perfect for afternoon tea, it relies on simple, high-quality ingredients to create a timeless dessert that is both elegant and comforting.


Ingredients

  • 120g Unsalted Butter, softened
  • 170g Chelsea White Sugar
  • 2 Fresh Eggs, room temperature
  • 240g All-Purpose Flour
  • 2 tsp Baking Powder
  • ¾ cup Whole Milk, room temperature


Instructions

  1. Preheat your oven to 180°C (350°F) and grease a round cake tin with butter and a light dusting of flour.
  2. In a large bowl, cream the softened butter and sugar together until the mixture is pale, airy, and no longer gritty.
  3. Beat in the eggs one at a time, ensuring each is fully incorporated and the batter is glossy before adding the next.
  4. Sift the flour and baking powder together, then gently fold them into the batter in three additions, alternating with the milk.
  5. Transfer the batter to the prepared tin and bake for 30 to 35 minutes until the cake is golden and the edges pull away from the sides.
  6. Cool the cake in the tin for 10 minutes before transferring to a wire rack to cool completely.
