Description
This classic Sock It To Me Cake transforms a simple yellow mix into a dense, professional-grade bundt cake using full-fat sour cream and a precise emulsion technique. Featuring a hidden ribbon of cinnamon-spiced pecans and a sweet vanilla glaze, it offers a perfect balance of moist crumb and crunchy texture.
Ingredients
- 1 (15.25 oz) package yellow cake mix
- 1 cup full-fat sour cream
- 1/2 cup vegetable oil
- 1/4 cup water
- 1/4 cup granulated sugar
- 4 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 cup pecans, finely chopped
- 2 tablespoons dark brown sugar
- 2 teaspoons ground cinnamon
- 1 cup confectioners’ sugar
- 2 tablespoons milk
Instructions
- Preheat your oven to 350°F (175°C) and thoroughly grease and flour a 10-inch bundt or tube pan.
- In a small bowl, whisk together 3 tablespoons of the dry cake mix with the dark brown sugar, cinnamon, and chopped pecans to form the streusel.
- In a large mixing bowl, combine the remaining dry cake mix, sour cream, vegetable oil, water, granulated sugar, eggs, and vanilla.
- Beat on low speed for one minute to incorporate, then increase to medium speed and beat for exactly two minutes to aerate the batter.
- Pour half of the batter into the prepared pan and sprinkle the streusel mixture evenly over the surface, staying slightly away from the edges.
- Carefully pour the remaining batter over the streusel layer, spreading it gently to seal the filling inside.
- Bake for 50 to 55 minutes until the cake is golden brown and the top springs back when lightly pressed.
- Cool in the pan for 10 minutes to stabilize the structure before inverting the cake onto a wire rack to cool completely.
- Whisk together the confectioners’ sugar and milk until smooth, then drizzle the glaze over the cooled cake.
Notes
To ensure a clean release from the pan, use a high-quality baking spray that contains flour or apply a traditional butter and flour coating to every crevice of the bundt mold. Always allow the cake to cool fully before glazing, otherwise the icing will melt into the crumb rather than sitting elegantly on top.
