This luxurious Strawberry Chocolate Cake blends the vibrance of fresh fruit with a decadent cream cheese-infused sponge. Finished with a silky white chocolate velvet frosting, it offers a sophisticated Mediterranean twist on a classic dessert pairing.
Ingredients
- 1 package White Cake Mix
- 3 Large Eggs
- 1 cup Frozen Sweetened Strawberries, puréed
- 8 oz Cream Cheese, softened
- 1/2 cup Heavy Whipping Cream
- 4 oz White Chocolate Squares, chopped
- 4 oz Cream Cheese, softened (for frosting)
- 8 oz Whipped Topping
- 1 cup Fresh Strawberries, sliced
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, combine the cake mix, eggs, strawberry purée, and softened cream cheese.
- Mix with an electric mixer on medium speed for two minutes until the batter is smooth and pale pink.
- Pour the batter into the prepared pans and bake for 20 to 25 minutes, or until the center is just set.
- Let the cakes cool completely for at least 30 minutes to allow the moisture to settle.
- Heat the heavy cream until it begins to simmer, then pour it over the white chocolate and additional softened cream cheese; stir until smooth and glossy.
- Once the chocolate mixture has cooled to room temperature, gently fold it into the whipped topping.
- Frost the cooled cake layers and garnish the top with fresh strawberry slices before serving.
Notes
For the smoothest crumb, ensure your cream cheese is at room temperature before mixing to prevent lumps in the batter. If you prefer a more intense berry flavor, let the puréed strawberries sit for 10 minutes before adding them to the mix to allow the natural juices to release. Always store this cake in the refrigerator due to the dairy-based frosting, but serve at room temperature for the best texture.
