Ingredients

  • 2 cups finely shredded baking apples
  • 2 cups all-purpose flour
  • 1 tablespoon cornstarch

  • 1 tablespoon ground cinnamon

  • For the filling: 1 cup chopped apples, 2 tablespoons brown sugar, 1 tablespoon water, 1 teaspoon cornstarch, 1/4 teaspoon cinnamon, 1 teaspoon lemon juice, 1 tablespoon butter
  • For the frosting: 1/2 cup softened butter, 2 cups powdered sugar, 8 oz cold cream cheese, 1 teaspoon vanilla, 1 teaspoon lemon juice, 1/2 teaspoon cinnamon


Instructions

  1. Preheat the oven. Heat your oven to 180°C (350°F) and grease two 8-inch cake tins thoroughly.
  2. Combine dry ingredients. Whisk together the flour, cornstarch, baking powder, baking soda, salt, and ground spices in a large bowl.
  3. Prepare the apples. Grate the baking apples using the fine side of a box grater until you have two cups of shreds, keeping the natural juices.
  4. Mix wet ingredients. In a separate bowl, whisk together the brown sugar, eggs, oil, milk, vanilla, and shredded apples until smooth.
  5. Fold the batter. Gently stir the dry ingredients into the wet mixture with a spatula just until the flour disappears.
  6. Bake the layers. Divide the batter between the prepared tins and bake for 30-33 minutes until a toothpick comes out clean.
