Instructions
- Preheat the oven to 350 degrees F (175 degrees C) and generously butter a 9-by-13-inch glass baking pan.
- Peel and slice the Granny Smith apples into thin crescents, then toss them in a medium bowl with 1/3 cup sugar and 1/2 teaspoon cinnamon to macerate.
- Cream the softened butter and granulated sugar in a large mixing bowl with a hand mixer for about three minutes until light and fluffy.
- Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next to maintain a smooth emulsion.
- On low speed, add the all-purpose flour, almond flour, baking powder, baking soda, cinnamon, salt, and buttermilk, mixing only until just combined with some flour streaks remaining.
- Gently fold the batter with a spatula to finish incorporating the flour, then spread half the apples in the pan, cover with batter, and top with the remaining apples.
- Bake for approximately one hour, rotating the pan halfway through, until a toothpick inserted into the center comes out clean.
