Description

This vibrant, no-bake smash cake features layers of refreshing, carved watermelon frosted with a stabilized vanilla yogurt cream. It is a perfect, hydrating milestone treat for little ones that comes together quickly without any oven time.


Ingredients

  • 1 whole seedless watermelon
  • 8 ounces whipped topping (Cool Whip), thawed
  • 1 cup Greek yogurt, cold
  • 2 tablespoons instant vanilla pudding mix
  • 1 cup fresh strawberries, hulled
  • 1 cup fresh blueberries
  • 2 kiwis, peeled and thinly sliced


Instructions

  1. Prep the base. Slice the bottom off the watermelon to create a flat surface and stand it upright on a cutting board.
  2. Remove the rind. Use a sharp chef’s knife to slice away all the green rind and white pith from top to bottom until you reach the red flesh.
  3. Prepare the frosting. In a medium bowl, whisk together the cold Greek yogurt, thawed whipped topping, and instant pudding mix until smooth and thick.
  4. Dry the melon. Pat the exterior of the carved watermelon thoroughly dry with paper towels to ensure the frosting adheres properly.
  5. Frost and decorate. Use an offset spatula to apply the frosting evenly over the watermelon, then press fresh berries and kiwi slices into the coating to decorate.
