Description

These moist, tender muffins combine the natural sweetness of ripe bananas with the hidden moisture of fresh zucchini. Infused with warm cinnamon, they offer a perfect, quick-to-bake treat that satisfies any late-night craving.

Ingredients

  • 2 cups shredded zucchini
  • 2 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1/2 cup vegetable oil
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt

Instructions

  1. Preheat the oven. Heat your oven to 350°F and line a standard 12-cup muffin tin with paper liners.
  2. Squeeze the zucchini. Wrap shredded zucchini in a clean towel and squeeze firmly to remove excess moisture until you have two cups of compressed shreds.
  3. Whisk dry ingredients. Combine flour, cinnamon, baking powder, baking soda, and salt in a large bowl until evenly mixed.
  4. Mix wet ingredients. Stir together mashed bananas, sugar, eggs, oil, and vanilla in a separate medium bowl until smooth.
  5. Combine the batter. Pour wet ingredients into dry, stirring gently with a spatula just until the streaks of flour disappear.
  6. Fold and portion. Gently fold in the zucchini, then scoop about one-third cup of batter into each prepared muffin liner.
  7. Bake the muffins. Bake for 22 to 26 minutes, or until the tops are springy and a toothpick inserted into the center comes out with just a few moist crumbs.

Notes

  • Ensure zucchini is thoroughly squeezed to prevent a dense, gummy muffin texture.
  • Use room temperature eggs to guarantee a smooth, emulsified batter consistency.
  • Spoon and level your flour when measuring to avoid adding too much, which leads to dry muffins.
  • Sprinkle coarse sugar on top before baking for a delightful bakery-style crunch.
  • Store these in an airtight container for up to three days to maintain their soft, moist crumb.
