Description

Ingredients

  • 1 cup unsalted butter
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 cup full-fat Greek yogurt
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 ripe peaches, sliced
  • 1/2 cup flour (for topping)
  • 1/4 cup granulated sugar (for topping)
  • 1/4 cup brown sugar (for topping)
  • 1/4 cup melted butter (for topping)


Instructions

  1. Brown the butter. Heat butter in a saucepan over medium heat until browned and fragrant, then set aside to cool slightly.
  2. Prepare the topping. Whisk flour, granulated sugar, and brown sugar together, then drizzle with melted butter and toss until coarse crumbs form.
  3. Whisk the base. Combine the browned butter with brown and granulated sugars in a large bowl, then beat in the vanilla and eggs.
  4. Incorporate remaining ingredients. Fold in the Greek yogurt, followed by the sifted flour, baking powder, and salt, mixing only until just combined.

Notes
