Description
This tender, fruit-forward cake features a rich hazelnut aroma from browned butter and a soft, melting crumb enriched by Greek yogurt. It is a perfect seasonal treat that balances toasted depths with the natural sweetness of sun-ripened peaches.
Ingredients
- 1 cup unsalted butter
- 1 cup light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 cup full-fat Greek yogurt
- 1 tablespoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 ripe peaches, sliced
- 1/2 cup flour (for topping)
- 1/4 cup granulated sugar (for topping)
- 1/4 cup brown sugar (for topping)
- 1/4 cup melted butter (for topping)
Instructions
- Brown the butter. Heat butter in a saucepan over medium heat until browned and fragrant, then set aside to cool slightly.
- Prepare the topping. Whisk flour, granulated sugar, and brown sugar together, then drizzle with melted butter and toss until coarse crumbs form.
- Whisk the base. Combine the browned butter with brown and granulated sugars in a large bowl, then beat in the vanilla and eggs.
- Incorporate remaining ingredients. Fold in the Greek yogurt, followed by the sifted flour, baking powder, and salt, mixing only until just combined.
- Bake the cake. Spread the batter into a pan, arrange peach slices on top, cover with the crumb mixture, and bake until golden and set.
Notes
- Always use a light-colored saucepan for browning butter so you can easily monitor the color of the milk solids to prevent burning.
- Toss your fresh peach slices in a little flour before topping the cake to prevent them from sinking into the batter during the bake.
- Ensure your eggs and yogurt are at room temperature to prevent the browned butter from seizing or clumping when combined.
- Using a kitchen scale to measure your flour is the most reliable way to achieve the intended delicate crumb structure.
- Let the cake rest for at least thirty minutes after baking to allow the juices to settle and the crumb to set properly.
