Description

Ingredients

  • 2 cups vegetable oil
  • 2 large eggs
  • 1/4 cup granulated sugar
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup confectioners sugar (for dusting)


Instructions

  1. Heat the oil. Fill a heavy-bottomed pot with two inches of oil and heat to exactly 375°F using a candy thermometer.
  2. Whisk the eggs. In a wide bowl, combine eggs and granulated sugar, whisking until the mixture is pale, frothy, and bubbly.
  3. Combine the liquids. Gently pour the milk and vanilla extract into the egg mixture, stirring slowly to keep the batter airy.
  4. Fold in dry ingredients. Sift together flour, baking powder, and salt, then fold into the wet ingredients until just combined and smooth.
  5. Pipe the batter. Transfer the batter to a pastry bag and pipe five-inch strips directly into the hot oil in small batches.
  6. Fry and turn. Fry for one minute, flip using a wire skimmer, and cook for another minute until both sides are golden mahogany.
  7. Drain and dust. Remove the strips to a paper-towel-lined rack and dust liberally with confectioners sugar while still warm.

  • Rest the mixed batter for five minutes before frying to allow the flour to hydrate for a more tender crumb.
