Description
These Classic Funnel Cake Fries offer the nostalgic charm of a summer fairground, featuring a crispy, golden-ridged exterior that gives way to a tender, airy center. Perfect for sharing, these delightful strips are simple to make and best served warm with a generous dusting of powdered sugar.
Ingredients
- 2 cups vegetable oil
- 2 large eggs
- 1/4 cup granulated sugar
- 1/2 cup whole milk
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup confectioners sugar (for dusting)
Instructions
- Heat the oil. Fill a heavy-bottomed pot with two inches of oil and heat to exactly 375°F using a candy thermometer.
- Whisk the eggs. In a wide bowl, combine eggs and granulated sugar, whisking until the mixture is pale, frothy, and bubbly.
- Combine the liquids. Gently pour the milk and vanilla extract into the egg mixture, stirring slowly to keep the batter airy.
- Fold in dry ingredients. Sift together flour, baking powder, and salt, then fold into the wet ingredients until just combined and smooth.
- Pipe the batter. Transfer the batter to a pastry bag and pipe five-inch strips directly into the hot oil in small batches.
- Fry and turn. Fry for one minute, flip using a wire skimmer, and cook for another minute until both sides are golden mahogany.
- Drain and dust. Remove the strips to a paper-towel-lined rack and dust liberally with confectioners sugar while still warm.
Notes
- Rest the mixed batter for five minutes before frying to allow the flour to hydrate for a more tender crumb.
- Use a clean, empty squeeze bottle with a widened tip if you do not have a professional pastry bag.
- Keep the cooked fries warm in a 200°F oven on a wire rack for up to twenty minutes without sacrificing their crispness.
- Fry in small batches to ensure the oil temperature remains stable and prevents the dough from absorbing excess grease.
