Description
This luxurious coffee cake features a velvety, cream cheese-infused batter layered with a fragrant cinnamon-sugar ribbon. Topped with a generous, buttery streusel, it offers a perfect balance of tender crumb and crunchy texture in every slice.
Ingredients
- 8 oz softened cream cheese
- 1 cup softened unsalted butter
- 1 cup light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tbsp cornstarch
- 1/2 tsp table salt
- 1/2 cup buttermilk
- 1 tbsp ground cinnamon
- 1/4 cup powdered sugar (for glaze)
- 1 tbsp milk (for glaze)
Instructions
- Cream the base. Beat the softened butter and cream cheese together in a mixing bowl until completely smooth and free of lumps.
- Combine sugars and eggs. Add the light brown sugar and granulated sugar, whipping until fluffy, then incorporate the eggs one by one followed by the vanilla extract.
- Sift dry ingredients. In a separate bowl, whisk together the flour, baking powder, cornstarch, and salt to ensure even distribution of leavening.
- Combine the batter. Gradually add the flour mixture to the wet base, alternating with buttermilk, and mix gently until just combined.
- Create cinnamon layer. Spread half the batter into a greased 9×13 pan, then sprinkle an even layer of mixed cinnamon and sugar over the top.
- Prepare the streusel. Dollop the remaining batter over the cinnamon layer, then cover with a crumb topping made by tossing flour, sugar, cinnamon, and melted butter.
- Bake the cake. Bake at 350°F for 40 to 50 minutes until a toothpick inserted in the center comes out clean.
- Glaze and serve. Whisk powdered sugar and milk together, drizzle over the cooled cake, and let rest for at least 20 minutes before slicing.
Notes
- Use room temperature dairy ingredients to prevent stubborn lumps in the cake batter.
- Stop mixing the batter as soon as the flour is incorporated to maintain a delicate, tender texture.
- Allow the melted butter for the streusel to cool slightly to ensure distinct, sandy crumbs rather than a greasy paste.
- Wait at least 30 minutes before slicing to ensure the structure sets and the cake does not crumble.
