Description

This luxurious coffee cake features a velvety, cream cheese-infused batter layered with a fragrant cinnamon-sugar ribbon. Topped with a generous, buttery streusel, it offers a perfect balance of tender crumb and crunchy texture in every slice.


Ingredients

  • 8 oz softened cream cheese
  • 1 cup softened unsalted butter
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tbsp cornstarch
  • 1/2 tsp table salt
  • 1/2 cup buttermilk
  • 1 tbsp ground cinnamon
  • 1/4 cup powdered sugar (for glaze)
  • 1 tbsp milk (for glaze)


Instructions

  1. Cream the base. Beat the softened butter and cream cheese together in a mixing bowl until completely smooth and free of lumps.
  2. Combine sugars and eggs. Add the light brown sugar and granulated sugar, whipping until fluffy, then incorporate the eggs one by one followed by the vanilla extract.
  3. Sift dry ingredients. In a separate bowl, whisk together the flour, baking powder, cornstarch, and salt to ensure even distribution of leavening.
  4. Combine the batter. Gradually add the flour mixture to the wet base, alternating with buttermilk, and mix gently until just combined.
  5. Create cinnamon layer. Spread half the batter into a greased 9×13 pan, then sprinkle an even layer of mixed cinnamon and sugar over the top.
  6. Prepare the streusel. Dollop the remaining batter over the cinnamon layer, then cover with a crumb topping made by tossing flour, sugar, cinnamon, and melted butter.
  7. Bake the cake. Bake at 350°F for 40 to 50 minutes until a toothpick inserted in the center comes out clean.
