Ingredients

  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 1 1/2 cups organic cane sugar
  • 4 large eggs, at room temperature
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 2 cups organic all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 1 cup powdered sugar
  • 3 tbsp strawberry preserves
  • 1 tbsp almond milk


Instructions

  1. Prepare oven and pan. Preheat your oven to 375°F and grease a loaf pan, lining it with parchment paper for easy removal.
  2. Combine dry ingredients. In a medium bowl, whisk together the flour, baking powder, and sea salt until well blended.
  3. Cream butter and cheese. Beat the softened butter, cream cheese, and cane sugar on high speed for 2-3 minutes until the mixture is pale and fluffy.
  4. Mix wet ingredients. Add eggs one at a time, beating well after each, then stir in the vanilla and sour cream before folding in the dry ingredients.
  5. Bake the cake. Pour batter into the prepared pan and bake for 45-60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool the loaf. Allow the cake to rest in the pan for 10 minutes before transferring to a wire rack to cool completely.
  7. Whisk the glaze. In a small bowl, whisk the powdered sugar, strawberry preserves, and almond milk until smooth.
  8. Glaze and serve. Drizzle the finished glaze over the cooled loaf and slice with a serrated knife.
