- 3 cups confectioners’ sugar
- 2 tbsp heavy cream
- 8 oz semi-sweet chocolate (56% cacao)
- 0.5 cups heavy cream (for ganache)
Instructions
- Prepare oven and pans. Heat oven to 350°F and prepare three 9-inch pans with parchment rounds.
- Sift dry ingredients. Whisk together the flour, cocoa, sugar, baking soda, baking powder, and salt.
- Emulsify wet base. Beat oil, eggs, and sour cream in a stand mixer until fully combined and smooth.
- Combine cake batter. Incorporate buttermilk and vanilla, then slowly mix in dry ingredients and finish with hot coffee or water.
- Bake the layers. Divide batter evenly into pans and bake for 24-26 minutes until a toothpick inserted into the center comes out clean.
- Prepare frosting. Whip softened butter and peanut butter, then gradually add confectioners’ sugar and heavy cream until fluffy.
- Assemble cake layers. Frost between each cake layer, apply a thin crumb coat to the exterior, and chill for 30 minutes.
- Create ganache finish. Pour hot cream over chopped chocolate, stir until glossy, and let cool before pouring over the chilled cake.
