Description

Transform a simple boxed mix into a decadent, bakery-quality dessert with just a few clever swaps. This doctored cake recipe yields a rich, velvety crumb and incredible moisture that stays fresh for days.

Ingredients

  • 1 (15.25 oz) box yellow cake mix
  • 4 large eggs, room temperature
  • 1/2 cup vegetable oil
  • 1 cup buttermilk
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (180°C) and spray two 8-inch or 9-inch round cake pans with non-stick spray.
  2. In a large mixing bowl, combine the yellow cake mix, eggs, oil, buttermilk, sour cream, and vanilla extract.
  3. Stir until the ingredients are just combined and smooth, being careful not to overmix the batter.
  4. Pour the batter evenly into the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  5. Let the cakes rest in their pans for 15 minutes before transferring them to a wire rack to cool completely.

Notes

To ensure the most tender results, avoid over-mixing the batter once the dry ingredients are incorporated. For the best flavor and texture, use full-fat sour cream and buttermilk, and always check your layers at the 25-minute mark to prevent over-baking.
