Ingredients

  • 1 batch brownie batter (equivalent to a 9×13 box mix or scratch recipe)
  • 16 ounces (450g) brick-style cream cheese, softened
  • 1 cup (240ml) heavy whipping cream, chilled
  • 1 cup (120g) powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 pint fresh strawberries, sliced lengthwise
  • 1 cup fresh blueberries


Instructions

  1. Preheat your oven to 325ºF (163ºC) and thoroughly grease a 15 x 11 inch jelly roll pan.
  2. Spread the prepared brownie batter evenly into the pan using an offset spatula to ensure a level surface.
  3. Bake for 33-37 minutes until the edges pull away slightly and a toothpick comes out with moist crumbs.
  4. Remove from the oven and allow the brownies to cool completely to room temperature on a wire rack.
  5. In a mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract until completely smooth.
  6. In a separate chilled bowl, whip the heavy cream until stiff peaks form.
  7. Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
  8. Spread the frosting over the cooled brownies, using a dollop technique to avoid lifting the brownie skin.
  9. Arrange the strawberry slices and blueberries in a patriotic design, reserving some frosting for a decorative border if desired.
