Description

This Mediterranean-inspired peach cake features a tender, yogurt-based crumb layered with fresh, succulent fruit. It is a simple, aromatic dessert that perfectly balances bright lemon notes with the natural sweetness of sun-ripened summer peaches.

Instructions

  1. Prepare the pan. Preheat your oven to 350°F (177°C) and grease a 9-inch springform pan thoroughly.
  2. Combine dry ingredients. Whisk the flour, baking powder, baking soda, and salt together in a large bowl until uniform.
  3. Emulsify wet ingredients. In a separate medium bowl, whisk the oil, sugar, eggs, yogurt, vanilla, almond extract, lemon juice, and zest until smooth.
  4. Fold the batter. Pour the wet ingredients into the dry bowl and whisk gently until just combined.
  5. Prepare the fruit. Toss sliced peaches with a tablespoon of sugar and a whisper of cinnamon to draw out natural juices.
  6. Assemble first layer. Spread half of the batter into the prepared pan and top with an even layer of cinnamon-sugared peaches.
  7. Add remaining layers. Spread the rest of the batter over the peaches, then arrange the remaining fruit on top.
  8. Bake the cake. Bake for 50–55 minutes until golden, covering loosely with foil if the top browns too quickly.
  9. Cool the cake. Allow the cake to cool on a wire rack for at least thirty minutes before releasing the springform ring.
  10. Finish and serve. Dust the cooled cake with confectioners’ sugar and slice slowly for serving.
