Description
This Mediterranean-inspired peach cake features a tender, yogurt-based crumb layered with fresh, succulent fruit. It is a simple, aromatic dessert that perfectly balances bright lemon notes with the natural sweetness of sun-ripened summer peaches.
Ingredients
- All-purpose flour
- Baking powder
- Baking soda
- Salt
- Vegetable oil
- Granulated sugar
- Eggs
- Greek yogurt
- Vanilla extract
- Almond extract
- Lemon juice
- Lemon zest
- Fresh peaches
- Cinnamon
- Confectioners’ sugar
Instructions
- Prepare the pan. Preheat your oven to 350°F (177°C) and grease a 9-inch springform pan thoroughly.
- Combine dry ingredients. Whisk the flour, baking powder, baking soda, and salt together in a large bowl until uniform.
- Emulsify wet ingredients. In a separate medium bowl, whisk the oil, sugar, eggs, yogurt, vanilla, almond extract, lemon juice, and zest until smooth.
- Fold the batter. Pour the wet ingredients into the dry bowl and whisk gently until just combined.
- Prepare the fruit. Toss sliced peaches with a tablespoon of sugar and a whisper of cinnamon to draw out natural juices.
- Assemble first layer. Spread half of the batter into the prepared pan and top with an even layer of cinnamon-sugared peaches.
- Add remaining layers. Spread the rest of the batter over the peaches, then arrange the remaining fruit on top.
- Bake the cake. Bake for 50–55 minutes until golden, covering loosely with foil if the top browns too quickly.
- Cool the cake. Allow the cake to cool on a wire rack for at least thirty minutes before releasing the springform ring.
- Finish and serve. Dust the cooled cake with confectioners’ sugar and slice slowly for serving.
Notes
- Use room temperature ingredients to ensure the batter emulsifies perfectly.
- Spoon and level your flour to avoid a dense or dry cake texture.
- Peel your peaches for a smoother texture by using the boiling water blanching method.
- Avoid opening the oven door during the first forty minutes to prevent the cake from sinking.
- Store the cake in a cool place once completely cooled to maintain the moisture in the crumb.
