Description

This vibrant, gluten-free sheet cake features a tender vanilla sponge topped with creamy frosting and a festive berry flag design. It is the perfect easy-to-make centerpiece for summer celebrations, offering a light and refreshing treat that everyone can enjoy.


Ingredients

  • 1 box high-quality gluten-free vanilla or chocolate cake mix (plus eggs, oil, and water as required by package)
  • 1 container vanilla frosting or 2 cups whipped cream
  • 1 pint fresh blueberries, washed and dried
  • 1 pint fresh strawberries, washed, dried, and sliced
  • 1 tablespoon powdered sugar (optional)


Instructions

  1. Bake the gluten-free cake mix according to the package directions in a rectangular pan, then let it cool entirely on a wire rack.
  2. Carefully wash the blueberries and strawberries, ensuring they are completely dry to prevent color bleeding into the frosting.
  3. Spread the softened vanilla frosting or whipped cream in an even, smooth layer across the top of the cooled cake.
  4. Place the blueberries in rows in the top-left corner to represent the stars of the flag.
  5. Arrange the sliced strawberries in horizontal rows across the cake to create the red stripes, leaving white frosting visible between them.
  6. Finish with a light dusting of powdered sugar if desired, and refrigerate for 15 minutes to set before slicing.

Notes

To ensure the most professional look, use a paper towel to pat each individual berry dry before assembly, as moisture is the main cause of frosting breakdown.
