  • White sugar
  • Brown sugar

  • Melted coconut oil
  • Large eggs
  • Vanilla extract
  • Peach extract
  • Chopped fresh peaches
  • Powdered sugar
  • Heavy cream


Instructions

  1. Preheat and prepare. Preheat your oven to 350°F (175°C) and grease two loaf pans thoroughly with cooking spray or butter and flour.
  2. Combine dry ingredients. Whisk the flour, sugars, salt, baking soda, and spices in a large bowl, ensuring there are no lumps in the brown sugar.
  3. Mix wet ingredients. Stir in the melted oil and eggs until just incorporated, then add the vanilla and peach extracts to the batter.
  4. Fold in peaches. Gently incorporate the chopped peach pieces into the batter by hand, taking care not to overmix the fruit.
