Description

Ingredients

  • 2 1/3 cups cake flour
  • 1 cup unsalted butter, room temperature
  • 1 1/2 cups granulated sugar
  • 1 tablespoon skim milk powder
  • 2 large eggs
  • 4 large egg whites
  • 1 1/2 cups fresh strawberries, finely chopped
  • 1/2 cup buttermilk, room temperature
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • Pink food coloring


Instructions

  1. Sift the cake flour, baking powder, baking soda, salt, and skim milk powder into a large bowl and whisk to ensure even distribution of leavening agents.
  2. In a separate vessel, whisk together the room-temperature buttermilk and vanilla extract until well combined.
  3. Using a stand mixer, beat the unsalted butter and granulated sugar for 5 to 7 minutes until the mixture is pale and fluffy.
  4. Incorporate the whole eggs and egg whites one at a time, mixing on medium speed until fully emulsified.
  5. Add the flour mixture in three parts, alternating with the buttermilk in two parts, mixing on the lowest speed until just combined.
  6. Divide the batter into two equal portions; fold pink food coloring and half the chopped strawberries into one, and the remaining strawberries into the other.
  7. Grease a Hello Kitty cake pan and place alternating dollops of pink and white batter into the mold, swirling slightly with a knife for a marbled effect.
  8. Bake at 350°F (175°C) for approximately 60 minutes or until a skewer comes out clean, then cool in the pan for 10 minutes before inverting onto a wire rack.
