Description

This tender Mango Yogurt Cake combines the brightness of citrus with the creamy richness of mango-infused yogurt for a perfectly moist, melt-in-your-mouth crumb. It is a simple, elegant dessert that delivers a soft texture and a refreshingly tropical finish, perfect for afternoon tea.


Ingredients

  • Softened butter, for the tin and the cake
  • Caster sugar
  • Lemon rind, finely grated
  • Eggs
  • Self-raising flour
  • Mango yogurt
  • Lemon juice
  • Icing sugar
  • Boiling water


Instructions

  1. Prepare oven and tin. Preheat your oven to 180ºC (350ºF) and grease a 20cm round cake tin with butter, lining the bottom with baking paper for an easy release.
  2. Cream butter and sugar. In a spacious mixing bowl, beat the softened butter, caster sugar, and lemon rind until the mixture becomes pale, light, and smooth.
  3. Emulsify the eggs. Add the eggs one at a time, beating thoroughly after each addition until the batter is creamy and cohesive.
  4. Incorporate remaining ingredients. Stir in the lemon juice, then alternate adding the sifted flour and the mango yogurt in two batches, mixing gently until just combined.
  5. Bake the cake. Spoon the batter into your tin, smooth the surface, and bake for 35 minutes or until a skewer inserted in the center comes out clean.
  6. Cool the cake. Let the cake rest in the tin for 10 to 15 minutes before turning it out onto a wire rack to cool completely.
  7. Glaze the cake. Whisk the icing sugar, butter, lemon juice, and boiling water together until smooth, then pour over the cooled cake and let it set.
