Ingredients

Instructions
- Prepare oven and tin. Preheat your oven to 180ºC (350ºF) and grease a 20cm round cake tin with butter, lining the bottom with baking paper for an easy release.
- Cream butter and sugar. In a spacious mixing bowl, beat the softened butter, caster sugar, and lemon rind until the mixture becomes pale, light, and smooth.
- Emulsify the eggs. Add the eggs one at a time, beating thoroughly after each addition until the batter is creamy and cohesive.
- Incorporate remaining ingredients. Stir in the lemon juice, then alternate adding the sifted flour and the mango yogurt in two batches, mixing gently until just combined.
- Bake the cake. Spoon the batter into your tin, smooth the surface, and bake for 35 minutes or until a skewer inserted in the center comes out clean.
- Cool the cake. Let the cake rest in the tin for 10 to 15 minutes before turning it out onto a wire rack to cool completely.
- Glaze the cake. Whisk the icing sugar, butter, lemon juice, and boiling water together until smooth, then pour over the cooled cake and let it set.
