Description
This easy, comfort-focused dessert features a tender golden cake that rises through a layer of warm, cinnamon-spiced peaches. It is the perfect weeknight treat that comes together using simple pantry staples for a gooey, caramelized finish.
Ingredients
- 2 cans (15 oz each) peach slices in heavy syrup
- 6 tablespoons salted butter
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 cup whole milk
- 1/4 teaspoon salt
- 1/4 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 teaspoon lemon zest
Instructions
- Melt the butter. Preheat oven to 375°F, place butter in a 9×11 casserole dish, and melt in the oven until liquid and golden.
- Whisk cake batter. Combine flour, baking powder, one cup sugar, and salt in a bowl, then stir in milk until just moistened.
- Layer the base. Pour batter over the melted butter in the casserole dish, spreading gently to the edges without mixing.
- Simmer the peaches. Combine peaches with syrup, sugars, spices, and lemon zest in a saucepan, simmering for 10-15 minutes until thickened.
- Assemble the layers. Spoon the spiced peach mixture evenly over the batter layer without stirring the two together.
- Bake until golden. Bake for 40-50 minutes until the top is golden-brown and the center is set but still slightly soft.
Notes
- Use a metal or ceramic baking dish for the best crust caramelization instead of glass.
- Simmer the peach syrup until it coats the back of a spoon to ensure a thick, jammy fruit layer.
- Allow the cake to rest for ten minutes after baking so the syrupy juices can properly set.
- Ensure your baking powder is active by testing a small amount in warm water before mixing.
