Ingredients

  • 2 cans (15 oz each) peach slices in heavy syrup
  • 6 tablespoons salted butter
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup whole milk
  • 1/4 teaspoon salt
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon lemon zest


Instructions

  1. Melt the butter. Preheat oven to 375°F, place butter in a 9×11 casserole dish, and melt in the oven until liquid and golden.
  2. Whisk cake batter. Combine flour, baking powder, one cup sugar, and salt in a bowl, then stir in milk until just moistened.
  3. Layer the base. Pour batter over the melted butter in the casserole dish, spreading gently to the edges without mixing.
  4. Simmer the peaches. Combine peaches with syrup, sugars, spices, and lemon zest in a saucepan, simmering for 10-15 minutes until thickened.
  5. Assemble the layers. Spoon the spiced peach mixture evenly over the batter layer without stirring the two together.
  6. Bake until golden. Bake for 40-50 minutes until the top is golden-brown and the center is set but still slightly soft.
