Description

Ingredients

  • 4 cups sliced peaches (fresh or canned)
  • 2 cups granulated sugar, divided
  • 1/2 cup water (only if using fresh peaches)
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup whole milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-by-13-inch baking dish.
  2. In a saucepan, combine the peaches, 1 cup of sugar, and water; simmer over medium heat for 10 minutes until the fruit is tender and a light syrup forms.
  3. In a large mixing bowl, whisk together the remaining 1 cup of sugar, flour, baking powder, and salt; gradually stir in the milk, melted butter, and vanilla until the batter is smooth.
  4. Pour the batter into the prepared baking dish, then carefully spoon the hot peaches and syrup over the top without stirring the mixture.
  5. Sprinkle with ground cinnamon and bake for 40 to 45 minutes until the batter rises to the top and becomes a deep golden brown.

Notes

To ensure the best rise, make sure your peach mixture is still hot when you pour it over the batter. Avoid stirring the layers together after assembly, as the natural movement of the batter rising through the syrup is what creates the signature custardy texture of this old-fashioned dessert.
