Description

This stunning Olivia Rodrigo-inspired cake features four layers of buttery vanilla sponge encased in a vibrant purple ‘GUTS’ aesthetic buttercream. Perfect for fans and celebrations alike, it balances professional piping techniques with a simple, reliable crumb that ensures every slice is as delicious as it is iconic.


Ingredients

  • 400g (1¾ cups) Unsalted Butter, softened
  • 400g (2 cups) Caster Sugar
  • 400g (3⅓ cups) Self-Raising Flour
  • 8 Large Eggs
  • 2 tsp Vanilla Extract
  • 500g (4 cups) Icing Sugar
  • Purple Gel Food Colouring
  • 2-3 tbsp Milk
  • Spotify Cake Topper
  • Decorative bows


Instructions

  1. Preheat your oven to 180°C (350°F) and grease and line four 6-inch cake tins.
  2. Cream the softened butter and caster sugar together in a large bowl until the mixture is pale and fluffy.
  3. Beat in the eggs one at a time, ensuring each is well incorporated, then stir in the vanilla extract.
  4. Gently fold in the sifted self-raising flour using a metal spoon, adding a splash of milk if needed to reach a dropping consistency.
  5. Divide the batter equally between the four tins and bake for 25-30 minutes until golden and a skewer comes out clean.
  6. Allow the cakes to cool in their tins for 10 minutes before transferring to a wire rack to cool completely.
  7. Prepare the buttercream by beating softened butter with icing sugar, purple gel coloring, and a splash of milk until smooth and stiff.
  8. Stack the cooled layers with buttercream in between, then apply a thin crumb coat over the entire cake and chill for 30 minutes.
  9. Apply a final thick layer of purple frosting, pipe ruffles around the edges using a petal tip, and finish with the Spotify topper and bows.

Notes

For the best structural integrity, ensure your cake layers are completely cold before assembly to prevent the buttercream from melting. If the cake tops are uneven, use a serrated knife to level them off for a stable stack. Always use gel food coloring rather than liquid to maintain the thick consistency required for piping those signature ruffles.
