Instructions
- Prep pans and oven. Preheat your oven to 350°F (177°C) and grease two 9-inch round cake pans, lining them with parchment paper.
- Combine dry ingredients. Whisk together the flour, cocoa powder, baking soda, baking powder, salt, and optional espresso powder until uniform.
- Whisk wet ingredients. Beat the vegetable oil, sugars, eggs, sour cream, and vanilla for two minutes before stirring in the shredded zucchini.
