Ingredients

Instructions

  1. Begin by beating the softened cream cheese and sweetener until the texture is smooth and lump-free. Gently fold in the egg and vanilla, then add the finely diced peaches. Transfer the mixture to a piping bag and chill it.
  2. In a small saucepan, combine the diced peaches with lemon juice, brown sugar, and cinnamon. Heat until the fruit is tender. Whisk in the cornstarch slurry and cook until the liquid turns into a translucent, glossy amber compote.
  3. Melt the white chocolate until smooth. Spoon the melted chocolate into each waffle bowl, rotating them to coat every internal crevice. Let the cones stand upright until the chocolate coating is firm and glistening.
  4. Take the chilled cheesecake filling and pipe a generous base into each chocolate-lined cone. Spoon a dollop of the warm peach compote directly into the center. Pipe a final layer of cheesecake over the top to seal in the fruit.
  5. Drizzle the remaining white chocolate over the tops in thin, elegant lines. Garnish with a sprinkle of graham cracker crumbs. Place the cones in the refrigerator for at least thirty minutes to allow the flavors and textures to harmonize before serving.

Notes

For the quickest and most stable white chocolate coating, ensure you use high-quality chocolate or add a teaspoon of coconut oil when melting. If you don’t have a piping bag for the cheesecake mixture, a large ziploc bag with the corner cut off works perfectly. Remember that the cheesecake filling needs adequate chilling time to stabilize, which prevents it from running out of the cone when eaten.
