Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 4-5 fresh peaches, sliced
  • 1 cup fresh peach purée
  • 1 package (15.25 oz) white box cake mix
  • 3 large eggs
  • 1/2 cup half-and-half
  • 1/3 cup vegetable oil
  • 3 oz peach Jello mix
  • 1 tsp vanilla extract


Instructions

  1. Melt the sugar. Place cast iron skillet over medium heat, melt butter, and whisk in granulated and brown sugars until smooth; remove from heat.
  2. Prepare the fruit. Blend two cups of peaches into a purée, measure one cup, and stir in the peach Jello mix and vanilla extract.
  3. Mix the batter. In a large bowl, combine cake mix, peach purée, eggs, half-and-half, and oil; beat on high for two minutes.
  4. Arrange the peaches. Layer fresh peach wedges in a decorative concentric circle over the butter-sugar mixture in the skillet.
  5. Pour the batter. Spoon the batter over the arranged peaches and smooth the surface evenly with a silicone spatula.
  6. Bake the cake. Bake at 350°F for 35 to 40 minutes until a toothpick inserted into the center comes out clean.
  7. Invert the cake. Let the cake rest for five minutes, then carefully flip onto a serving platter and allow the syrup to release the fruit.
