Description
This easy peach upside down cake uses a convenient box mix to create a tender, moist crumb crowned with perfectly caramelized fresh peaches. It is a stunning, rustic dessert that balances sweet fruit with a rich, buttery syrup for an unforgettable summer treat.
Ingredients
- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 4-5 fresh peaches, sliced
- 1 cup fresh peach purée
- 1 package (15.25 oz) white box cake mix
- 3 large eggs
- 1/2 cup half-and-half
- 1/3 cup vegetable oil
- 3 oz peach Jello mix
- 1 tsp vanilla extract
Instructions
- Melt the sugar. Place cast iron skillet over medium heat, melt butter, and whisk in granulated and brown sugars until smooth; remove from heat.
- Prepare the fruit. Blend two cups of peaches into a purée, measure one cup, and stir in the peach Jello mix and vanilla extract.
- Mix the batter. In a large bowl, combine cake mix, peach purée, eggs, half-and-half, and oil; beat on high for two minutes.
- Arrange the peaches. Layer fresh peach wedges in a decorative concentric circle over the butter-sugar mixture in the skillet.
- Pour the batter. Spoon the batter over the arranged peaches and smooth the surface evenly with a silicone spatula.
- Bake the cake. Bake at 350°F for 35 to 40 minutes until a toothpick inserted into the center comes out clean.
- Invert the cake. Let the cake rest for five minutes, then carefully flip onto a serving platter and allow the syrup to release the fruit.
Notes
- Ensure peach purée is measured exactly to one cup to maintain the ideal cake structure.
- Use room temperature eggs and half-and-half to prevent the fats from clumping during mixing.
- Slice peaches to a consistent half-inch thickness to ensure they cook evenly without becoming mushy.
- Avoid overmixing the batter after adding dry ingredients to keep the crumb tender rather than tough.
- Allow the cake to rest for exactly five minutes before flipping to let the caramel set just enough for a clean release.
