Description

This effortless pumpkin spice cake delivers a velvety, tender crumb infused with warm seasonal spices and topped with a luscious cream cheese frosting. It is the perfect one-bowl dessert that comes together in under an hour for a cozy, stress-free treat.

Ingredients

  • 4 large eggs
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 1 can (15 oz) pure pumpkin puree
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 8 oz brick cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Prep the oven. Preheat the oven to 350°F and grease a 9×13 inch baking pan with non-stick cooking spray.
  2. Whisk wet ingredients. Combine eggs, sugar, vegetable oil, and pumpkin puree in a large bowl, whisking until smooth.
  3. Combine dry ingredients. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, salt, ginger, and cloves.
  4. Mix components. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Bake the cake. Spread the batter into the prepared pan and bake for 30-35 minutes until a toothpick inserted in the center comes out clean.
  6. Cool the cake. Allow the cake to cool completely on a wire rack before attempting to add the frosting.
  7. Whip the frosting. Beat the softened butter and cream cheese together until silky, then add vanilla extract.
  8. Sweeten the frosting. Gradually add the powdered sugar, beating on low speed until the frosting is fluffy and spreadable.
  9. Frost and finish. Spread the frosting evenly over the cooled cake and optionally top with chopped pecans before slicing.

Notes

  • Measure your flour using the spoon-and-level method to keep the cake light rather than dense.
  • Ensure the cream cheese and butter are at room temperature before whipping to prevent lumps.
  • Always use brick-style cream cheese instead of the tub variety for a stable, professional-grade frosting.
  • Avoid overmixing the batter once the flour is added to maintain the cake’s tender texture.
