Description

This savory zucchini pie combines fresh garden squash, Parmesan cheese, and a light baking mix to create a tender, custard-like meal. It is the perfect quick solution for a flavorful weeknight dinner that comes together in under 30 minutes.

Ingredients

  • 3 cups thinly sliced zucchini
  • 3 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1 cup pre-made baking mix
  • 1/4 cup canola oil
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic, minced
  • 1/2 cup chopped onion
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, whisk together the eggs, oil, Parmesan, parsley, garlic, salt, and pepper until smooth.
  2. Fold in the sliced zucchini, chopped onion, and baking mix until the ingredients are just combined.
  3. Pour the batter into a greased deep-dish pie plate, spreading it evenly.
  4. Bake at 350°F (175°C) for 25 to 35 minutes until the center is set and the top is lightly golden brown.

Notes

For the best texture, ensure your zucchini is sliced consistently thin and pat dry if the squash seems overly watery. This dish is best enjoyed immediately while warm, though leftovers can be stored in the refrigerator and reheated for a quick lunch the following day.
