Ingredients
- Ripe pears
- Melted butter
- Vegetable oil
- Brown sugar
- Eggs
- Water
- Vanilla extract
- All-purpose flour
- Baking soda
- Salt
- Ground cinnamon
- Ground ginger
- Ground nutmeg
- Ground cloves
- Old-fashioned oats
Instructions
- Prep oven and pan. Preheat your oven to 350F (175C) and grease a 9×5-inch loaf pan with baking spray.
- Whisk wet ingredients. Combine melted butter, vegetable oil, brown sugar, eggs, water, and vanilla in a large bowl and whisk until smooth.
- Mix dry ingredients. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, nutmeg, and ground cloves.
- Combine the batter. Gradually stir the dry ingredients into the wet mixture in three batches, mixing only until combined to keep the crumb tender.
- Add pears and oats. Pour batter into the prepared pan, arrange sliced pears on top, and sprinkle with old-fashioned oats.
- Bake the cake. Bake for 40 to 45 minutes until a toothpick inserted into the center comes out clean.
- Cool and serve. Allow the cake to cool in the pan for 15 minutes, remove it, and dust with powdered sugar before slicing.
Notes
- Use firm, ripe pears like Bosc to ensure they hold their shape during the baking process.
- Ensure eggs are at room temperature to prevent the melted butter from solidifying into clumps.
- Sift your spices and baking soda together to guarantee even distribution and avoid bitter concentrations.
- Toss pear slices in a light coating of flour if you want to keep them from sinking into the batter.
- Cover the loaf loosely with foil if the top begins to brown too quickly before the center is finished baking.
