Description

This easy-to-make spiced pear cake features a tender, moist crumb infused with warming cinnamon, nutmeg, and ginger. Finished with jammy, sliced pears and a hint of rustic oats, it is the perfect quick treat for any autumn evening.

Ingredients

  • Ripe pears
  • Melted butter
  • Vegetable oil
  • Brown sugar
  • Eggs
  • Water
  • Vanilla extract
  • All-purpose flour
  • Baking soda
  • Salt
  • Ground cinnamon
  • Ground ginger
  • Ground nutmeg
  • Ground cloves
  • Old-fashioned oats

Instructions

  1. Prep oven and pan. Preheat your oven to 350F (175C) and grease a 9×5-inch loaf pan with baking spray.
  2. Whisk wet ingredients. Combine melted butter, vegetable oil, brown sugar, eggs, water, and vanilla in a large bowl and whisk until smooth.
  3. Mix dry ingredients. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, nutmeg, and ground cloves.
  4. Combine the batter. Gradually stir the dry ingredients into the wet mixture in three batches, mixing only until combined to keep the crumb tender.
  5. Add pears and oats. Pour batter into the prepared pan, arrange sliced pears on top, and sprinkle with old-fashioned oats.
  6. Bake the cake. Bake for 40 to 45 minutes until a toothpick inserted into the center comes out clean.
  7. Cool and serve. Allow the cake to cool in the pan for 15 minutes, remove it, and dust with powdered sugar before slicing.

Notes

  • Use firm, ripe pears like Bosc to ensure they hold their shape during the baking process.
  • Ensure eggs are at room temperature to prevent the melted butter from solidifying into clumps.
  • Sift your spices and baking soda together to guarantee even distribution and avoid bitter concentrations.
  • Toss pear slices in a light coating of flour if you want to keep them from sinking into the batter.
  • Cover the loaf loosely with foil if the top begins to brown too quickly before the center is finished baking.
