Description

This effortless peach cobbler features a delicate, cake-like batter that bakes around syrupy fruit to create a tender, melt-in-your-mouth dessert. It is the perfect Mediterranean-inspired comfort dish for warm evenings and family gatherings.

Ingredients

  • 8 tablespoons salted butter
  • 1 cup self-rising flour
  • 1 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 29 ounces canned sliced peaches in heavy syrup

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
  2. Place the stick of butter in a 9×13 baking dish and slide it into the oven until the butter is completely melted and bubbling.
  3. In a mixing bowl, combine the self-rising flour, sugar, and cinnamon.
  4. In a small jug, stir the vanilla extract into the milk, then whisk this liquid into the dry ingredients until just combined.
  5. Remove the hot baking dish from the oven and pour the batter directly over the melted butter without stirring.
  6. Pour the canned peaches with their entire syrup content over the batter, distributing them evenly.
  7. Return the dish to the oven and bake for 50 to 55 minutes, or until the top is golden-brown and the cake has risen through the fruit.

Notes

For the best results, ensure your milk is cold before mixing to create the signature tender crumb structure. Resist the urge to stir the batter once it has been added to the butter, as the natural separation of layers is what creates the unique texture. Always allow the cobbler to rest for at least ten minutes after baking to let the syrupy juices set properly.
