Description

A delicate, tender-crumbed vanilla layer cake perfect for first birthdays and milestone celebrations. Infused with aromatic vanilla bean paste and filled with a bright strawberry buttercream, this cake offers a sophisticated yet gentle flavor profile that melts in the mouth.

Ingredients

  • All-purpose flour
  • Granulated sugar
  • Baking powder
  • Baking soda
  • Kosher salt
  • Unsalted butter, softened
  • Warm milk
  • Sour cream
  • Vanilla bean paste
  • Vanilla extract
  • Egg whites
  • Confectioner’s sugar
  • Strawberry preserves
  • Matcha powder

Instructions

  1. Prepare the workspace. Preheat oven to 350F and grease four six-inch cake pans with butter and flour, then soak cake strips in water.
  2. Sift dry ingredients. Combine flour, sugar, baking powder, baking soda, and salt in a bowl, whisking until the mixture is uniform and aerated.
  3. Whisk liquid ingredients. Blend room temperature butter, warm milk, sour cream, vanilla extract, and vanilla bean paste, then gently fold in the egg whites.
  4. Combine and bake. Slowly whisk the dry mixture into the wet ingredients, divide into pans, and bake for thirty-five to forty minutes until golden.
  5. Whip the buttercream. Beat softened butter with confectioner’s sugar, vanilla, and a pinch of salt until light, fluffy, and cloud-like.
  6. Create strawberry infusion. Fold strained strawberry preserves into a portion of the buttercream to achieve a pink hue and berry flavor.
  7. Assemble the cake. Pipe strawberry buttercream between cooled cake layers, apply a thin crumb coat of plain frosting, and chill to set.
  8. Apply final decorations. Smooth the remaining white buttercream over the cake and pipe floral accents using pink and matcha-tinted frosting.

Notes

  • Use a kitchen scale to ensure even layers for a perfectly balanced stack.
  • Bring all dairy ingredients to room temperature before mixing to prevent batter curdling.
  • Chill the cake after applying the crumb coat to ensure a stable structure for final decorating.
  • Use a hot metal scraper when applying the final buttercream layer for a professional, glossy finish.
  • Fold the batter gently to avoid developing excess gluten, which keeps the crumb tender.
