Description

This refreshing, no-bake dessert features a firm, chilled watermelon base blanketed in a luscious, aerated coconut cream frosting. It is a stunning, fruit-forward treat that comes together quickly for a light and cooling summer finale.


Ingredients

  • 1 medium-sized watermelon
  • 1 can (13.5 oz) full-fat coconut milk (chilled 24 hours)
  • 2 tablespoons coconut nectar
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon arrowroot powder
  • 1 cup fresh berries (blackberries, raspberries, or blueberries)
  • 1/4 cup slivered almonds


Instructions

  1. Chill coconut milk. Refrigerate the can of coconut milk for 24 hours to ensure the cream solidifies for optimal whipping.
  2. Separate the cream. Carefully scoop only the thick, solid coconut cream into a cold mixing bowl, discarding the liquid.
  3. Whip the frosting. Beat the cream with coconut nectar, vanilla, and arrowroot powder until thick and airy, then refrigerate until needed.
  4. Slice the watermelon. Cut two parallel slices from the melon to create a thick, stable four-inch tall cylinder.
  5. Shape the cylinder. Trim the green rind from the sides of the melon slab to reveal a clean, uniform red circular base.
  6. Dry the melon. Use paper towels to pat the sides and top of the melon until completely dry to ensure the frosting adheres.
  7. Chill the base. Wrap the melon in paper towels and refrigerate for at least one hour to firm up the fruit.
  8. Frost and decorate. Spread the chilled frosting over the watermelon, top with fresh berries and toasted almonds, and serve immediately.
