Description

This refreshing, no-bake Watermelon Fruit Cake Tower is a stunning centerpiece crafted from stacked, carved melons and decorated with vibrant seasonal berries and fruit. It is the perfect healthy, eye-catching dessert for hot summer days, coming together in just fifteen minutes.


Ingredients

  • 1 large seedless pink watermelon
  • 1 medium seedless yellow watermelon
  • 2 cups fresh mixed berries (strawberries, blueberries, blackberries, raspberries)
  • 2 fresh kiwis
  • 2 ripe peaches or nectarines
  • 1 bunch fresh mint leaves
  • Wooden toothpicks


Instructions

  1. Clean the melons. Wash the outer rinds of both the pink and yellow melons thoroughly under cold water and pat them dry with a towel.
  2. Carve the base. Slice a 4-to-5 inch thick cylinder from the center of the pink watermelon and trim away the rind and pith to create a uniform round disc.
  3. Prepare the top tier. Slice a 3-to-4 inch thick cylinder from the yellow watermelon, trimming the rind so the disc diameter is two inches smaller than the pink base.
  4. Stack the tiers. Place the pink base on a platter, insert a toothpick into the center, and firmly press the yellow layer on top to secure it.
  5. Prep the fruit. Cut the kiwis into zig-zag floral crowns, thinly slice the peaches, and rinse the assorted berries.
  6. Decorate the sides. Use halved toothpicks to anchor sliced peaches and berries around the sides of both tiers in an organized pattern.
  7. Add the crown. Secure the kiwi flower to the top center with a toothpick and surround it with a ring of blueberries and raspberries.
  8. Garnish and serve. Tuck fresh mint leaves into any visible gaps and serve the tower immediately.
