Ingredients

  • 1 large egg
  • 1/4 cup granulated sugar
  • 1 cup whole milk
  • 1/2 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/4 cup Dutch-process cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine sea salt
  • Neutral oil for frying
  • Powdered sugar for dusting


Instructions

  1. Whisk the base. Crack the egg into a bowl, add sugar, and whisk until pale; blend in the milk and vanilla until smooth.
  2. Sift dry ingredients. Sift the flour, cocoa powder, baking powder, and salt into a separate bowl, then gradually incorporate into the wet mixture until glossy and lump-free.
  3. Prepare the dispenser. Pour the batter into a squeeze bottle and let it rest at room temperature for five minutes.
  4. Heat the oil. Pour oil into a heavy-bottomed pan to a depth of 1.5 inches and heat to 350-375°F.
  5. Form the cakes. Squeeze the batter into the hot oil in circular, overlapping patterns to create a lace-like funnel cake.
  6. Fry the cakes. Fry for two minutes on the first side, flip carefully, and fry for another 60 to 90 seconds until crisp and mahogany in color.
  7. Drain and cool. Lift the cake from the oil, drain briefly, and place on a wire rack to cool for one minute.
  8. Dust and serve. Dust generously with powdered sugar while still warm and serve immediately.
